Easy Corn Chowder

Sorry there isn't a picture...it was eaten by the time I thought of putting it on the blog. I doubled the recipe below to make 5 full bowls. A great idea for leftover corn from the holidays.

Easy Corn Chowder
4 ears of corn or a 10-oz pkg whole corn
1/2 cup peeled, cubed potato
1/2 cup chopped onion
1/3 cup water
2 teaspoons chicken bouillon granules
1/4 teaspoon pepper
1-3/4 cups milk (see below)
1 tablespoon margarine/butter
2 tablespoons flour

If using fresh corn, cut off cobs. In a large saucepan, combine corn (fresh or frozen), potato, onion, water, bouillon, and pepper. Bring to a boil and reduce heat. Cover and simmer about 10 minutes or until corn and potatoes are just tender, stirring occasionally. Stir in only 1-1/2 cups of milk and the margarine. Combine the remaining milk and flour. Stir milk/flour mixture into corn mixture. Cook and stir until thickened and bubbly. Cook and sitr 1 more minute. We like to garnish ours with cheddar cheese and crumbled bacon. Makes 4 to 6 side-dish servings.
